CHICKEN
RECIPE OF THE DAY (October 3rd 2006):
Orange Baked Chicken

Ingredients: 1 egg slightly beaten, 1/3 cup frozen
OJ concentrate thawed, 2 tbsp. soya sauce, 1 cup fine
dry bread crumbs, 2 tsp. crushed dried basil, 1-1/2
tsp. salt 1 frying chicken (2-1/2 to 3 lbs) cut up
Method: 1. In large bowl, combine egg, OJ and
soy sauce 2. In another bowl, or on a large piece of
waxed paper, combine bread crumbs, basil and salt 3.
Spray 9x13 baking dish in Pam
Dip chicken in OJ mixture, then roll in crumbs 4. Arrange
chicken (skin side up) in single layer in baking pan
5. Sprinkle with any remaining crumbs 6. Bake in pre-heated
350° oven for 50-60 minutes, or until chicken is
golden and tender
