CHICKEN
RECIPE OF THE DAY (October 7th 2006):
Greek Lemon Chicken
by Florentine
Ingredients: 1 chicken (3 lb), salt and pepper,
1 tsp. oregano, 2 cloves minced garlic, 3 tbsp. butter,
1/3 Cup water, 1/4 Cup lemon juice, 1 tsp. grated lemon
rind
Method: 1. Season chicken inside & out
with salt & pepper 2. Mix together 1/2 of oregano,1
clove minced garlic. 3. Rub on inside of chicken 4.
Brown chicken on all sides in butter in large skillet
5. Put in crock pot 6. Sprinkle chicken with remaining
oregano & garlic 7. Add water to skillet & scrape
bottom 8. Pour over chicken & cover 9. Cook on low
for about 8 hours 10. Mix together lemon juice &
grated rind 11. Add to chicken for last hour of cooking
12. Carve chicken, skim fat from liquid & pour over
chicken. serve immediately (serves 4 people)
