CHICKEN
RECIPE OF THE DAY (October 8th 2006):
Chicken Fajitas

Ingredients: 1 sliced onion, 1 sliced red pepper,
4 skinless boneless chicken breast halves, 1 tbsp. vegetable
oil, 1 tsp. chili powder, 1/2 tsp. ground cumin, 1/4
tsp. dried oregano, 1/4 tsp. black pepper, 1/2 tsp.
salt, 1 clove crushed garlic, 3 drops hot sauce, 1 tbsp.
fresh lime juice, 1 sliced avocado, 1 tomato cut in
wedges, fresh coriander leaves, 8 flour tortillas warmed
Method: 1. Slice the onion and pepper into
1/4 inch strips. 2. Slice the chicken into 1/4 inch
strips. 3. Heat 2 teaspoons of oil in a large frying
pan set over medium heat. 4. When the oil is hot, add
the chicken. Sprinkle with the chili powder, cumin,
oregano, pepper and salt. 5. Stir frequently until light
golden brown and slightly firm about 5 minutes. 6. Place
on a plate and keep warm. 7. Reduce heat to medium low.
8. Add remaining teaspoon of oil to the pan. 9. Add
the garlic, onion, and red pepper. 10. Stir frequently
until softened, about 5 minutes. 11. Return the chicken
to the pan. 12. Stir in the hot sauce and lime juice,
cook until chicken is hot. 13. Pour the chicken/pepper
mixture into a large heated serving bowl. 14. Garnish
the chicken with the avocado, tomato and cilantro sprigs.
Serve with warm flour tortillas.
