CHICKEN RECIPE OF THE DAY (October 9th 2006): Austrian Chicken with Sour Cream

Ingredients:
3 1/2 pounds chicken pieces, flour, 2 tbsp. butter, 2 tbsp. oil, 1 cup chopped onion, 4-6 ounces sliced mushrooms, 1 cup green pepper strips, 1/2 cup thinly sliced celery, 1 cup thinly sliced carrots, 2 cans (14.5 ounces each) diced tomatoes, 1 tsp. salt, 1 tsp. paprika, dash pepper, 1/4 cup flour, 3/4 cup sour cream

Method: 1. Coat chicken pieces with flour. 2. well in butter and oil in a large skillet. 3. Add onion, green pepper, celery, carrots, and mushrooms. 4. Cook for 2 minutes 5. Add tomatoes, salt, paprika, and pepper. 6. Cover and simmer for 1 hour, until chicken is tender. 7. Remove chicken, reserving liquid, keep warm while making gravy. 8. Skim excess fat off liquid in skillet. 9. Combine 1/4 cup flour with the sour cream; whisk or beat until smooth. 10. Stir into the liquid and cook over low heat 3 to 5 minutes, until heated through and smooth. serve with warm flour tortillas (Serves 6 people)
