CHICKEN RECIPE OF THE DAY (October 18th 2006): MEDITERRANEAN CHICKEN

Ingredients:
1 broiler-fryer chicken quarter cut, 1-1/2 tsp. salt divided, 1/4 tsp. pepper, 3 tbsp. butter, 1 chpped medium onion, 1/2 cup chicken broth, 1 medium eggplant pared & cubed, 2 medium tomatoes peeled & chopped, 1/4 tsp. of dried leaf basil / thyme & oregano, 1/4 cup grated parmesan

Method: 1. Sprinkle chicken with 1 tsp. salt and pepper. 2. Heat butter in large skillet, add chicken and brown on each side. 3. Remove from skillet. Add onion and cook until tender then add broth. 4.Add eggplant and tomatoes, sprinkle with herbs and remaining 1/2 tsp. salt. 5. Add chicken, spoon some veg mixture over chicken. 6. Cover, simmer 30 minutes, until chicken is tender. serve sprinkled with grated parmesan cheese
