RECIPE OF THE DAY (October 30th 2006):
Baked Garlic Thyme Chicken

Ingredients: 4 tbsp. softened butter, 2 chopped
scallions, 2 crushed garlic cloves, 1 tsp. lemon juice,
1 tsp. dried thyme leaves, 1/2 tsp. salt, 1/4 tsp. freshly
ground pepper, 1 chicken (3 pounds) cut up
Method: 1. Preheat oven to 350ºF. 2. In
a small bowl, blend together butter, scallions, garlic,
lemon juice, thyme, salt and pepper 3. Arrange chicken,
skin side up, in a 13x9x2 inch baking dish
Spread seasoned butter over chicken 4. Bake 50 minutes,
or until tender, basting occasionally with pan juices
