CHICKEN RECIPE OF THE DAY (September 16th 2006): CHICKEN MARENGO

Ingredients: 1 chicken, cut up, salt and pepper, 3 Tbsp. vegetable oil, 2 med. onions, thinly sliced
2 garlic cloves, chopped, 1/4 pound mushrooms, sliced, 1 Tbsp. chopped parsley, 1/2 tsp. dried thyme, 1/4 tsp. rosemary, crumbled, 1 bay leaf, 1 can (14 oz.) Italian peeled tomatoes, with the juice, coarsely cut up, 1/4 cup dry white wine

Method:
1. Season chicken with salt and pepper 2. In a large frying pan, heat oil over med. heat
3. Add chicken and brown lightly on both sides, about 8 minutes. Remove and set aside. 4. Remove all but 3 Tbsp. fat from pan. Add onions, garlic, and mushrooms and cook until tender, about 5 minutes 5. Return chicken to pan and Sprinkle with parsley, thyme, rosemary, and bay leaf 6. Add tomatoes and wine, partly cover and simmer 45 to 50 min, until chicken is tender.
7. Remove bay leaf and serve
