CHICKEN
RECIPE OF THE DAY (November 9th 2006):
AUSTRALIAN CHICKEN PIE

Ingredients: 8 x 4 lb chicken, 5
lb. pork belly (in brine), allspice, pepper , bay Leaves,
onions, celery, 1 bunch chopped parsley, 5 tsp. gelatine,
salt to taste
Method: 1. Simmer chickens and belly pork with
seasonings and onions and carrots. 2. When chicken is
tender, remove and let cool covered with some of the
stock. 3. Continue cooking pork till tender. 4. Cube
both meats. 5. Alternate in pie dish. 6. Season and
sprinkle with parsley. 7. Strain liquid. Measure 10
pints. Add gelatine to liquid. 8. Bring to the boil
and taste for salt. 9. Pour over meat. 10. Make a crust
from puff pastry or short crust. Roll out thinly place.
Damp the rim of the pie dish and place the pastry over
it. Seal well. 11. Brush crust with egg, bake 20 minutes
in hot oven
