CHICKEN
RECIPE OF THE DAY (November 11th 2006):
FIJI CHICKEN CASSEROLE

Ingredients: 3 lb. frying chicken cut up, 1 cup
butter or oil, 1 can cream of mushroom soup, 1 can cream
of celery soup, 1 1/2 tsp. curry powder, 1/2 tsp. garlic
powder (optional)
Method: 1. Preheat oven to 350. 2. Wash chicken
quicky under cold water. Dry well. 3. Grease
(with oil or butter) the large (12") skillet. 4.
Place cut-up chicken in skillet, skin side up. 5. Open
both cans of soup. Pour them onto chicken. 6. Sprinkle
in curry powder and garlic powder (optional). 7. Stir
soups around till all flavors blend and chicken pieces
are completely covered with the mixture. 8. Cover skillet.
Bake on center rack of oven for 1 1/2 hours. Last 1/2
hour of cooking time, remove skillet lid to brown.
