CHICKEN
RECIPE OF THE DAY (November 14th 2006):
Apricot Salsa Chicken

Ingredients: 1/2 cup flour, salt & pepper to
taste, 1/4 tsp. paprika, 6 boneless skinless chicken
breast halves, 3 tbsp. vegetable oil, 1 jar (16 oz)
salsa, 1 jar (12 oz) apricot preserves, 1/2 cup apricot
nectar, hot cooked rice
Method: 1. In shallow bowl, combine first 3
ingredients. 2. Add chicken, toss to coat. 3. In a skillet,
brown chicken in hot oil; drain. 4. Stir in salsa, preserves
& nectar and bring to a boil. 5.
Reduce heat then simmer, uncovered, for 15 minutes or
until sauce thickens and meat juices run clear. serve
over rice.
