CHICKEN RECIPE OF THE DAY (November 16th 2006): Orange & Garlic Spiced Chicken

Ingredients:
1 orange (zested and juiced), 1-2 cloves garlic, 1 tbsp. dried or fresh taragon, olive oil, 1 tbsp. honey, 1/4 cup white wine vinegar to taste, salt and pepper to taste, 1 cup sliced almonds, chicken breast


Method: 1. Wash Chicken Breast 2. Season with salt and pepper 3. Toast Almonds in skillet on low heat while warming in pan on medium heat 4. Zest Orange, then juice orange and add honey 5. Grate garlic clove(s) and add olive oil and white wine vinegar to taste. 6. Add in taragon, salt and pepper to taste 7. Sppoon mixture onto almonds while toasting them for extra flavor 8. Put chicken breast in pan, pour mixture over it and cook on 350-345 degrees for approximately 30 min. (45 min. to an hour if really thick) serves well with steamed rice or broccoli
