CHICKEN RECIPE OF THE DAY (September 18th 2006): CHARDONNAY CHICKEN

Ingredients: 4-6 boneless chicken breasts, flour, 1/2 cup Chardonnay wine (or any similar dry white wine), 1/4 cup lemon juice, 5-6 chopped green onions, 2 pressed cloves garlic, butter

Method:
1. Lightly flour chicken and fry in butter until golden brown, about 6 minutes on each side
2. Place in warm oven 3. Add 3 tbsp. of butter to pan 4. Saute onions and garlic in butter 5. Add wine and lemon juice 6. Simmer on low for 5 minutes 7. Add chicken to sauce, cover & simmer 5-10 minutes or until tender and done 8. Serve with rice
