CHICKEN
RECIPE OF THE DAY (November 21st 2006):
Canadian Chicken w/ Sultanas
& Melon Balls

Ingredients: 2 chicken thighs boned, salt and pepper
to taste, 1 tbsp. oil, 1 tbsp. honey vinegar, 1 cup
chicken stock, 1 tbsp. cedar jelly or liquid honey,
1 tbsp. sultanas, 7 tbsp. butter, a few cantaloupe balls
(cut out with a Parisian scoop or melon baller)
Method: 1. Season the chicken thighs with salt
and pepper. 2. In a sauté pan, cook the chicken
in the hot oil until it colours and remove from the
pan and set aside. 3. Remove the fat from the pan and
return the pan to the heat. 4. Deglaze with the vinegar
and boil for 5 seconds. 5. Add the chicken stock and
return the chicken to the pan. 6. Add the cedar jelly
or honey and the sultanas. 7. Cook the chicken, turning
it half way through. 8. Five minutes before serving,
add the melon balls.
serve hot with tri-colour fettuccine. (serves
2 people)
