CHICKEN RECIPE OF THE DAY (December 1st 2006): Chicken Pasta Italiana

Ingredients:
2 cups water, 1/2 cup dry white wine, 4 boneless skinned chicken breasts, 4 cloves garlic, 3 tbsp. thinly sliced basil, salt and pepper to taste, 2 tbsp. lemon juice, 4 oz. uncooked rigatoni pasta, 1 tbsp. olive oil, 1 medium size red pepper julienne, 4 ripe olives thinly sliced

Method: 1. Bring water to a boil in medium sauce pan. 2. Add wine, chicken and garlic. Reduce heat and simmer 15 minutes or until chicken is done. Remove chicken and garlic from broth, reserving broth. 3. Let chicken cool. Cut chicken into 1/2" pieces. Set aside. 4. Crush garlic in a small bowl. Add basil, salt, pepper and lemon juice. Mix well and set aside. 5. Bring reserved broth to a boil and add pasta. 6. Cook 12 minutes or until al dente. Drain. Rinse under cold water. Drain. Toss pasta with olive oil. 7. Combine resrved garlic-lemon mixture, chicken, pasta, bell peppers and olives in a large bowl. Toss gently. Chill at least 1 hour. 8. Spoon chicken mixture onto lettuce lined plates.
