CHICKEN RECIPE OF THE DAY (September 21st 2006): CHICKEN LIME SOUP

Ingredients:
1 1/2 cups chopped celery, 1 cup chopped green onions, 3 chopped carrots, 2 minced cloves garlic, 1/4 cup uncooked brown rice, 5 cups chicken broth, 1/4 tsp. ground cloves, 1/2 tsp dried thyme, 1/2 tsp. dried oregano, juice of one lime, 4 diced Roma tomatoes, 1/2 cup chopped green onions or chives, 2 cups shredded cooked chicken, salt and freshly ground pepper to taste

Method: 1. Generously coat a large saucepan with cooking spray. 2. Add celery, 1 cup green onions, carrots and garlic and saute until softened. 3. Add rice, chicken broth, cloves, thyme and oregano. 4. Simmer uncovered, 30-40 minutes or until rice is fully cooked. 5. Remove from heat and cool slightly. 6. Puree soup in blender and return to saucepan. 7. Bring back to simmer and add lime juice, tomatoes, green onions or chives and cooked chicken. 8. Season to taste with salt and pepper. 9. Serve with lime wedges and/or toasted corn tortilla strips.
