CHICKEN
RECIPE OF THE DAY (January 4th 2007):
Easy Chicken Curry

Ingredients: 4 chicken breasts, 1 sprig parsley,
1 pot low-fat Bulgarian yoghurt, Juice of 1 lemon
2 tsp. curry powder of your choice, 1 tsp. powdered
coriander, 1 tsp. cinnamon, 1 tsp. grated ginger
Method:
1. Mix the yoghurt, curry and ginger root, then add
the lemon juice, coriander and cinnamon.
2. Pour mixture over chicken breasts and leave to marinate
for an hour.
3. Put the chicken breasts on a non-stick baking tray
covered in greaseproof paper and cook in an oven preheated
to 450°F (235°C) for about 20 minutes, sprinkling
regularly with marinade to prevent chicken from drying
out.
4. Finish under grill.
serve on a bed of rice, with rest of sauce and sprinkle
with parsley or coriander
